Benefits of Einkorn Flour

You don’t have to look far to find a long list that boasts all of the health benefits of einkorn flour. It is a delicious ancient grain that hasn’t been processed the same way as modern-day wheat. Packed full of nutrients, it is a great way to sneak in more protein and vitamins into your standard recipes! It has a high protein content and a much lower gluten content that is easier to digest, making it a great option for folks who are gluten sensitive.

Einkorn also contains much less phytic acid than typical modern flours. Phytic acid inhibits your body from absorbing nutrients. However, einkorn also contains phytase, an enzyme that breaks down phytic acid, making it easier for the body to absorb nutrients like vitamins A, B, and magnesium. 

It is quickly becoming my favorite flour to use in all sorts of recipes. I often find myself swapping out regular flour for this healthy grain, and have used it successfully in browniespancakes, and even cornbread! It works great for everyday and special occasions alike. I have used it in quick breads (like banana bread-recipe coming soon!) with delicious results. It brings a subtle nutty flavor to baked goods that I really enjoy.

Can I Substitute Einkorn Flour for All-Purpose Flour?

Einkorn flour does not absorb liquid in the same way that typical all purpose flour does. For best results, it is a good idea to either use less liquid or more flour in einkorn recipes. The standard measurement is to use 1/4 cup extra of einkorn flour for every 1 cup of regular flour a recipe calls for. So, if a recipe called for 2 cups of all purpose flour, you would need 2 1/2 cups of einkorn. Or, you could simply use less liquid!

It can be a bit of a learning curve, but once you get the hang of it, it’s very easy. I also find that letting the einkorn doughs sit out at room temperature for a few minutes before baking helps the flour to absorb any extra liquid.

Where to Buy Einkorn Flour?

At the time of writing this, I have not been able to find einkorn flour for sale at a grocery store near me. Hopefully that will change one day! I typically buy my all purpose einkorn flour through Thrive Market. It is also sold through Amazon! You can find all purpose and whole wheat einkorn flour available here.

Can I Mill Einkorn Flour?

Absolutely! For those who have invested in a grain mill, you can purchase einkorn wheat berries to create freshly milled einkorn flour at home. The einkorn berries are available for purchase online through Azure Standard, Vitacost, Grand Teton Ancient Grains, or Amazon.

Ten Essentials for the Beginner Baker

  • Food Thermometer. I use this little guy often when making homemade bread and dough recipes. It’s incredibly useful to have an exact temperature measurement to successfully proof yeast.
  • Cookie Scoops. Great for creating uniform cookies, muffins…even meatballs!
  • Baking Sheets. Incredibly versatile and a must have for any home baker.
  • Measuring Cups. Always a good idea to invest in a good set.
