Sausage balls are a Christmas morning staple at our house. I hate to say I don’t make them very often any other time of year, but honestly I don’t know why! They are easy to make and so darn good.

A lot of sausage ball recipes are made with the addition of Bisquick, but I like to make mine with einkorn flour! This simple swap works perfectly in this recipe for an easy nutrient boost and to add some additional protein.

Ingredients You’ll Need

  • Sausage: I used mild breakfast style sausage in this recipe.
  • Cream Cheese: Softened, please! It will make the mixture come together much easier.
  • Cheddar Cheese: I used grated sharp cheddar cheese. Feel free to experiment with other flavors. Pepper jack would be delicious!
  • All Purpose Einkorn Flour: I use Jovial foods brand.

How to Make Einkorn Sausage Balls

  1. Preheat oven to 350 degrees F. Prepare a large baking sheet by lining it with parchment paper.
  2. In the bowl of a stand mixer fitted with a paddle attachment or a large mixing bowl, combine sausage, softened cream cheese, cheddar cheese, and einkorn flour.
  3. Turn the mixer on medium-low speed, mixing thoroughly until all the ingredients are combined.
  4. Using a medium sized cookie scoop or just your hands, begin grabbing some of the sausage mixture and rolling it into balls. Place each sausage ball about 2 inches apart on the baking sheet.
  5. Bake in preheated oven for 25 minutes or until completely cooked through. Enjoy!

How to Quickly Soften Cream Cheese

If you’re in a pinch and need the cream cheese softened FAST, follow these instructions:

  • Fill a bowl with hot water. Place the cream cheese directly in the water (making sure the outer foil is still intact!)
  • Let the cream cheese sit for 10-15 minutes until perfectly softened. Voila!
