Sweet and delicious, these strawberry oatmeal bars boast a crumbly, buttery exterior, with a layer of sweet strawberry preserves sandwiched in the middle. Made with einkorn flour and sprouted rolled outs, they are an easy, delicious, and wholesome household favorite.

Buttery Strawberry Bliss.

Strawberries are one of my absolute favorite things to bake with come berry season (see this recipe for strawberry shortcake biscuits– heavenly!), and strawberry jam is no different.

These bars are seriously easy and delicious, and is definitely one recipe that both of my girls would give their stamp of approval on. Sweet and buttery, with a little vanilla glaze to make them over the top delicious (and let’s be honest, extra pretty!)

  • Brown Sugar: Granulated white sugar or even coconut sugar would be an easy swap.
  • Butter: Make sure its cold! It gets grated into the flour and oat mixture.
  • Strawberry Preserves: Use your favorite brand of preserves, or swap for your favorite strawberry jam.

Step by Step Instructions

  1. Step 1: Combine the einkorn flour, rolled oats, salt, baking powder, and sugar into a large bowl.

  1. Step 2: Add in the cold grated butter, working it into the dry ingredients with your hands until it resembles coarse crumbs.

  1. Step 3: Gently press half of the oat and flour mixture into the bottom of prepared baking dish, and then top with the strawberry preserves, spreading evenly.

  1. Step 4: Add the remaining flour and oat mixture onto the top of the preserves, pressing down slightly. Bake at 350 for 40 minutes.

Substitutions & Variations

  1. Flour: Einkorn flour gives these strawberry oatmeal bars a tender, buttery texture, but all-purpose flour can be substituted 1:1 if needed. If using whole wheat flour, expect a slightly heartier bar.
  2. Oats: Sprouted rolled oats are recommended, but regular old-fashioned rolled oats work just as well. Avoid quick oats, as they can change the texture.
  3. Gluten-Free: Although it boasts a much lower gluten content that regular flour, einkorn still does technically contain some gluten, so this recipe is not technically gluten-free. For a gluten-free option, use a 1:1 gluten-free flour blend and certified gluten-free oats (texture may vary).

2 cups einkorn flour

1 ½ cups sprouted rolled oats

½ tsp salt

1 tsp baking powder

2 sticks butter, grated

12 oz strawberry preserves

23 tablespoon heavy cream or milk
