These decadent and fudgy einkorn brownies are both simple and delicious. They are given an extra boost of nutrients thanks to einkorn flour, and make the perfect sweet treat the whole family will love.
Brownies are one of my favorite desserts. I am a chocolate lover at heart, and find myself often craving something rich and chocolatey. These delicious brownies do just the trick! They are easy to whip up whenever a sweet tooth hits, and bring a yummy chocolate flavor like no other.

Ingredients You’ll Need
- Butter: Melted, please! You can use salted or unsalted.
- Unsweetened Cocoa Powder: A must for rich, chocolatey brownies.
- Sugar: I use a combination of brown and white sugar in this recipe.
- Egg: Room temperature is best.
- Salt: The salt helps to balance out all of the sweetness. I love and use Redmond mineral salt.
- Espresso Powder: Optional, but recommended! It adds a delicious depth of flavor to the brownies.
- All Purpose Einkorn Flour: I love and use Jovial Foods brand.
- Chocolate chips: This recipe calls for semi-sweet chocolate chips, but you could substitute dark or milk chocolate if you prefer.
How to Make Fudgy Einkorn Brownies
- Begin by preheating oven to 350 degrees.
- In a small bowl, melt the butter. Set aside for a few minutes to cool.
- In a large mixing bowl, add in the brown and white granulated sugar, cooled butter, egg, and 2 tsp vanilla extract. Using a wooden spoon, stir together well until combined.
- In a separate bowl, melt 1/2 cup chocolate chips, cooling slightly before adding into the bowl and stirring together with the other ingredients. Add in 1 tsp salt, 1/4 cup cocoa powder, and 1 cup einkorn flour, stirring to combine. Fold in 1 cup of chocolate chips.
- Add the brownie batter to a prepared 9×9 baking dish that has been greased or lined with parchment paper.
- Bake in preheated oven until cooked completely, about 30 minutes, or until a toothpick inserted into the center of the pan comes out clean.
- Let cool for a few minutes before digging in. They pair nicely with a tall glass of cold milk, or maybe even some homemade ice cream 🙂
Tips for Success
- Make sure the melted butter has cooled before adding to the batter. Hot melted butter can scramble the egg.
- Be careful substituting regular all purpose flour for the einkorn flour. Just know that einkorn does not absorb as much liquid as regular flour, so you may have to adjust the flour measurement in the recipe.
- You can choose to melt the chocolate chips using a double boiler on the stove, or in the microwave. If melting chocolate in the microwave, microwave the chocolate for 20-30 seconds at a time, stirring often.

Fudgy Einkorn Brownies
Ingredients
- 1 stick of butter, melted
- 1/4 cup brown sugar
- 1/2 cup white sugar
- 1/2 cup semi-sweet chocolate chips, melted
- 1 egg
- 2 tsp vanilla extract
- 1 tsp salt
- 1 tsp instant espresso powder
- 1/4 cup unsweetened coca powder
- 1 cup Einkorn flour
- 1 cup chocolate chunks
Instructions
- Preheat oven to 350 degrees. Lightly grease a 9 x 9 baking dish and set aside.
- Begin by melting the butter. Set aside to cool for a couple minutes while you prepare the other ingredients.
- In a large bowl, add melted butter, sugars, egg, and vanilla extract. Whisk until smooth.
- Add in melted chocolate, whisking again until combined.
- Add dry ingredients and stir until combined. Gently fold in the chocolate chunks, stirring well.
- Add the batter to the baking dish, spreading the batter evenly throughout the dish.
- Bake brownies for 30 minutes or until a toothpick inserted in the middle comes out clean. The top of the brownies should be set and slightly crispy, while the middle should be soft but set.
