Man, oh man, is there anything better than soft and chewy homemade chocolate chip cookies? The only way I could think to make this classic recipe even better was by using einkorn flour! Einkorn flour is an ancient grain that hasn’t been processed the same way modern wheat has, making it a delicious and nutritious option that is packed full of vitamins and protein.

You can find many delicious einkorn recipes here on the blog, including browniespancakes, sandwich bread, and of course a few delicious cookie recipes! It really is a great way to sneak in more nutrition into your standard recipes. You can find easy beginner recipes for einkorn wheat in this post.

Why You’ll Love This Recipe

  • SOFT AND CHEWY: This cookie recipe has the perfect texture! Its thick and soft, with crisp edges and a chewy center, just as all cookies should be, right?
  • BOOSTED WITH NUTRIENTS: Einkorn flour is an ancient grain that hasn’t been processed the same way regular all purpose flour has. Due to this, it is packed full of protein and vitamins, and boasts a much lower gluten content than modern flour, making it a good option for those who may be gluten sensitive.
  • QUICK AND EASY: These cookies can be made in one bowl and bake up very quickly (10-11 minutes!) This helps obtain that chewy texture that we’re going for.

Ingredients You’ll Need

This is just a quick overview of essential ingredients needed for this recipe. Make sure to check out the recipe card below for the full list!

  • Einkorn Flour: I love and use all purpose einkorn flour from Jovial Foods.
  • Butter: Softened, please! You can use salted or unsalted.
  • Sugar: I use a combination of brown and white sugar in this recipe for an extra chewy, flavorful cookie.
  • Eggs: You’ll need 1 egg + 1 egg yolk.
  • Chocolate chunks: I used semi-sweet chocolate chunks in this recipe.

Tips for Making This Recipe

  1. Chilling: I highly recommend chilling this dough for at least 1 hour in order to obtain the best texture. Chilled cookie dough yields a thicker, chewier cookie.
  2. Baking: I always like to slightly underbake my cookies in order to obtain a chewier texture. They will continue to cook briefly on the cookie sheet once they are pulled out of the oven.
  3. Egg Yolk + Cornstarch: Don’t skip out on these additions. They help to make a much chewier, softer cookie!
  4. I recommend using cookie scoops so that all the cookies are uniform in size. I have linked the ones I like down below. I typically use a medium size scoop for cookies.
  5. Variations: Feel free to experiment with different add ins. I add chopped pecans in this einkorn pecan chocolate chip cookie recipe. Dark chocolate chips would also be a delicious swap.

Step by Step Instructions

  1. Preheat oven to 350 degrees F. Prepare two baking sheets by lining them with parchment paper or a silpat baking mat. Set aside.
  2. In the bowl of a stand mixer fitted with a paddle attachment or a medium bowl, cream together softened butter and sugars until combined.
  3. Beat in the egg, egg yolk and vanilla extract until light (about 1 minute).
  4. Begin adding in the dry ingredients, mixing until combined.
  5. Add chocolate chips and mix well.
  6. Add the cookie dough to the fridge to chill for a minimum of 1 hour and up to 2 days.
  7. Using a medium sized cookie scoop, scoop out 12 equal balls of cookie dough onto each prepared cookie sheet.
  8. Bake in preheated oven for approximately 10-11 minutes. Take them out when they are just barely starting to turn golden brown.
  9. For best results, let them sit on the baking pan for 5 minutes before removing to a wire rack to cool.
  10. Baked cookies will store well in an airtight container for up to 5 days.

Recipe FAQs

Can I freeze this cookie dough?

Yes! These cookies can be made ahead of time and placed in the freezer until ready to bake. Sometimes I will make a double batch just so I can freeze some to have at a later time. My method for this is to scoop out balls of cookie dough and add them to a gallon sized freezer bag, making sure I store the bag laying flat in the freezer. Once you are ready to bake, you can pop the cookies straight from the freezer into the oven, or set out on the counter to thaw beforehand. If you are putting them straight in the oven from the freezer, you may need to adjust your baking time to allow the frozen dough extra time to bake.

How to prevent chocolate chip cookies from hardening?

I find that cookies baked with einkorn flour tend to harden faster than ones baked with typical all purpose flour. To prevent this, be sure to store cookies in an airtight container. Adding a small piece of bread to the container also assists with keeping the cookies extra soft.
