  • Yield: 12 brownies 1x

Ingredients

Scale
  • 1 stick of butter (melted)
  • 1/4 cup brown sugar
  • 1/2 cup white sugar
  • 1/2 cup semi-sweet chocolate chips (melted)
  • 1 egg
  • 2 tsp vanilla extract
  • 1 tsp salt
  • 1 tsp instant espresso powder
  • 1/4 cup unsweetened coca powder
  • 1 cup Einkorn flour
  • 1 cup chocolate chunks

Instructions

  1. Preheat oven to 350 degrees. Lightly grease a 9 x 9 baking dish and set aside.
  2. Begin by melting the butter. Set aside to cool for a couple minutes while you prepare the other ingredients.
  3. In a large bowl, add melted butter, sugars, egg, and vanilla extract. Whisk until smooth.
  4. Add in melted chocolate, whisking again until combined.
  5. Add dry ingredients and stir until combined. Gently fold in the chocolate chunks, stirring well.
  6. Add the batter to the baking dish, spreading the batter evenly throughout the dish.
  7. Bake brownies for 30 minutes or until a toothpick inserted in the middle comes out clean. The top of the brownies should be set and slightly crispy, while the middle should be soft but set.
  8. Enjoy!
