Sourdough discard does it again! I am convinced it is one of the best and most useful ingredients you can have in your kitchen. I use it in everything, from desserts like sourdough chocolate chip cookies and sourdough lemon poppyseed bread, to more savory options like sourdough cheddar biscuits and sourdough discard pizza dough.

These crackers are easy to make and easily customizable for a quick, on the go snack that is perfect if you have little ones around! Pair them with sliced fruit and assorted meats and cheese for a quick charcuterie board, use them as a topping on soups, dip them in hummus… the possibilities are pretty endless.

  • Sourdough Starter: Sourdough discard or active starter will work in this recipe.
  • Melted Butter: I used salted butter, but unsalted will also work here.
  • Parmesan: Adds flavor!
  • Salt: I love and use Redmond Mineral salt.
  • Everything Bagel Seasoning: I use the everything bagel seasoning from Thrive Market. Any brand of seasoning will work! You can find instructions to make your own in the recipe card below.

Tips for Preparing to Make This Recipe

  1. Parchment Paper: Make sure to line the baking sheet with this to help the crackers easily peel away from the pan. This will make the entire process much easier!
  2. Offset Spatula: I found this extremely useful for getting the mixture to spread as thinly and evenly as possible.
  3. Think Thin: The thinner you spread the mixture, the crispier the crackers will be!
  4. Everything Bagel Seasoning: A favorite of mine! I use it in these homemade sourdough everything bagels. You can use a store bought version or refer to the recipe card for instructions on how to make your own.

Step by Step Instructions

  1. Preheat oven to 350 degrees F. Prepare a large baking sheet by lining it with parchment paper. This is essential to keep the crackers from sticking!
  2. In a mixing bowl, combine the sourdough discard, melted butter, grated parmesan cheese, salt, and seasonings. Mix well to combine.
  3. Pour the mixture onto the prepared pan, using an offset spatula to spread the mixture as thinly and evenly as possible. The thinner the batter, the crunchier the crackers will be.
  4. Optional: Sprinkle the top of the mixture with extra seasonings and salt to taste. I usually do!
  5. Bake in preheated oven for 15 minutes. Remove from the oven and pre-cut the crackers into squares using a pizza cutter or sharp knife. This will make the crackers much easier to snap apart later.
  6. Place the crackers back into the oven to continue baking for 20 more minutes or until golden brown. Allow them to cool briefly on the pan before snapping apart.
  7. Store crackers in an airtight container to enjoy for up to 1 week. Enjoy!

  • 3 tbsp melted butter
  • 1/4 tsp salt
  • 1/4 tsp dried parsley
  • 1 tsp everything bagel seasoning

Homemade Everything Bagel Seasoning

  • 2 tbsp sesame seeds
  • 2 tbsp poppy seeds
  • 1 tbsp coarse sea salt
  • 1 tbsp dried minced onion
