An Easy & Cozy Fall Breakfast.

We are full swing into fall themes for homeschool, and our apple unit has been one of my absolute favorites so far! We’ve been reading books and doing different crafts all week long, and even conducted an apple taste test, which was super fun.

Along with all of this, I’m trying to incorporate more apple recipes into our week. We just recently read “How to Make an Apple Pie and See the World,” (such a cute book by the way), and although I love my sourdough apple pie recipe, I wanted to opt for something a little easier to make, and more filling.

So, this apple pie oatmeal was born! I used my gingerbread oatmeal base as inspiration, and then just swapped out the spices to make something reminiscent of apple pie. So easy, and so so yummy, too!

Ingredient Notes & Substitutions

  • Apples: Use your favorite variety! I love to use Gala or Honeycrisp.
  • Oats: Old-fashioned oats are recommended- use whatever brand you prefer! Quick oats will become much too mushy in this recipe.
  • Sweetener: I love to use maple syrup as a sweetener in this recipe as it adds beautiful color and flavor. If you prefer to use a different sweetener, brown sugar works great as an easy swap.

Description

This apple pie oatmeal is the perfect cozy breakfast for fall! Ready in just 10 minutes, it’s an easy, satisfying breakfast for busy mornings, or for when you just want something extra cozy to celebrate all the flavors of fall. It’s packed with cinnamon, nutmeg, and a touch of ginger to give it lots of flavor that is reminiscent of classic apple pie.

Ingredients

Units Scale
  • 1 tbsp butter
  • 1 cup chopped apples (about 1 large apple)
  • 1 tsp cinnamon
  • ½ tsp salt
  • ¼ tsp nutmeg
  • ⅛ tsp ginger
  • 1 tsp pure vanilla extract
  • ¼ cup maple syrup
  • 1 cup milk
  • 1 cup water
  • 2 cups old fashioned rolled oats

Instructions

  1. In a medium saucepan, add the butter, chopped apple, cinnamon, salt, nutmeg, ginger, vanilla, and maple syrup over medium high heat. Stir together and then cook until the apples have softened, about 2-3 minutes. Keep a close eye on it and stir often to ensure the mixture doesn’t burn.
  2. Add the milk, water, and oats. Stir to combine and then bring to a boil. Once boiling, turn the heat down to medium low, cover, and cook for 5 minutes, or until all the liquid has been absorbed and the oats are soft.
  3. Add an additional splash of milk if needed to loosen the oatmeal. Serve and garnish with an extra drizzle of maple syrup and a sprinkle of cinnamon, if preferred. Vanilla yogurt also works as a delicious topping for added flavor and protein.

Notes

  • Storage: Leftovers will store well in an airtight container in the fridge for up to 3-4 days. Reheat over the stove with additional milk or water as needed, to loosen the mixture and ensure it doesn’t burn.
  • Toppings: Lots of options here! Additional spices like a sprinkle of cinnamon and nutmeg work well, along with chopped pecans or walnuts. Vanilla yogurt is a great addition for added protein.
