Description

Sweet and delicious, these strawberry oatmeal bars boast a crumbly, buttery exterior, with a layer of sweet strawberry preserves sandwiched in the middle. Made with einkorn flour and sprouted rolled outs, they are an easy, delicious, and wholesome household favorite.

Strawberry Oatmeal Bars

2 cups einkorn flour

1 1/2 cups sprouted rolled oats

1/2 tsp salt

1 tsp baking powder

1 cup brown sugar

2 sticks butter, grated

12 oz strawberry preserves

Vanilla Icing

1/2 cup powdered sugar

2-3 tbsp heavy cream or milk


Instructions

  1. Combine the einkorn flour, rolled oats, salt, baking powder, and sugar into a large bowl.
  2. Add in the cold grated butter, working it into the dry ingredients with your hands until it resembles coarse crumbs.
  3. Gently press half of the oat and flour mixture into the bottom of prepared baking dish (recommend 8 x 10 or 9 x 13), and then top with the strawberry preserves, spreading evenly.
  4. Add the remaining flour and oat mixture onto the top of the preserves, pressing down slightly. Bake at 350 for 40 minutes.
  5. Allow the bars to cool completely before slicing into squares. If desired, drizzle with vanilla icing before serving. Enjoy!
