Fresh, in season produce is always one of the best parts about the summer months, and buddy do I look forward to fresh peaches all year long!
I have seen a few variations of baked peaches over on Instagram lately, and wanted to try my own spin on it. Baked peaches are incredibly popular as a dessert topped with vanilla ice cream (heavenly), but I wanted to try out a breakfast version that I thought my kids would enjoy too.
The verdict? This recipe was definitely a keeper! Peaches topped with a buttery brown sugar crumble and then baked until golden and slightly caramelized? HEAVEN. Top it with vanilla bean yogurt and a little drizzle of maple syrup to make it over the top delicious.

Ingredients
3 peaches, sliced in half and pit removed
Crumble Topping
2 tablespoon rolled oats
2 tbsp brown sugar
¼ tsp cinnamon
2 tbsp cold salted butter
Instructions
- Preheat oven to 350 degrees F.
- In a small mixing bowl, combine the oats, sugar, and cinnamon. Stir together gently, and then add in the cold butter.
- Using your fingers, combine the cold butter into the oat mixture until the mixture resembles coarse crumbs. Set aside while you prepare the peaches.
- Slice each peach in half, and then remove the pit. Place into an 8 x 8 baking dish, cut side up.
- Sprinkle the brown sugar oat mixture over the top of each peach.
- Bake in preheated oven for 25 minutes, or until golden brown and slightly carmelized.
- Serve immediately with preferred toppings. Enjoy!
Notes
- Baking Time: Please note that the baking time will vary slightly depending on how ripe the peaches are. I try and find pretty ripe peaches, but if they are not quite as ripe, the bake time will be longer.
- Storage: Leftovers will store well in an airtight container in the fridge for up to 3 days. Reheat in the oven until warm, and then add preferred toppings.
