Something that I am making all the time (especially during the summer months!) is fresh homemade mayo. Since I have a bounty of fresh herbs in the garden, I have been looking for more and more ways to use them up! They are delicious in a variety of baked goods, herb butter, drinks, and more! So, why not herb mayo?

Turns out, its the perfect condiment for summertime! Delicious and easy.

Ingredients You’ll Need

  • Mayo: It is my preference to use my homemade avocado oil mayo, but store bought will also work.
  • Salt + Pepper: The recipe calls for 1/4 tsp of each, but you can adjust according to your taste preferences.
  • Paprika: Adds delicious spice and color.
  • Garlic Powder: Adds lots of flavor and pairs well with the fresh herbs.
  • Fresh Herbs: I used chopped fresh chives and parsley, but you can absolutely experiment with different flavors!

Tips for Preparing to Make This Recipe

  1. If you don’t want to make your own homemade mayo, you can substitute with whatever brand of mayo you prefer. For a high quality store-bought mayonnaise, I love Chosen Foods Avocado Oil Mayo.
  2. If making homemade mayo, I recommend using a neutral flavored oil, like avocado oil or vegetable oil. I do not recommend using olive oil.
  3. Experiment with different fresh herbs. Chopped fresh basil or green onion would also be delicious.
  4. Add a little hot sauce or pinch of cayenne for a little heat!
  5. You could easily make a double batch of this mayo if you’re serving a crowd.
  6. Use this flavorful mayo in a variety of dishes. It makes a great base for salad dressing, pasta salad, tuna salad, chicken salad, and more! It also works great as a condiment on sandwich bread, homemade sourdough bread, and hamburger buns.
