Fresh, in season produce is always one of the best parts about the summer months, and buddy do I look forward to fresh peaches all year long!

I have seen a few variations of baked peaches over on Instagram lately, and wanted to try my own spin on it. Baked peaches are incredibly popular as a dessert topped with vanilla ice cream (heavenly), but I wanted to try out a breakfast version that I thought my kids would enjoy too.

The verdict? This recipe was definitely a keeper! Peaches topped with a buttery brown sugar crumble and then baked until golden and slightly caramelized? HEAVEN. Top it with vanilla bean yogurt and a little drizzle of maple syrup to make it over the top delicious.

  • A FUN WAY TO USE FRESH PEACHES: If I’m not using fresh peaches in this peach blueberry crisp or freezing slices for smoothies, this recipe is definitely the way to go.

Key Ingredient Notes

  • Fresh Peaches: Fresh, in season peaches work best for this recipe.
  • Brown Sugar: Feel free to swap with granulated sugar, coconut sugar, etc. I do not recommend adding a liquid sweetener to the oat mixture. If you like, you can drizzle honey or maple syrup over the top of the peaches once they are baked, just before serving.
  • Oats: I used sprouted rolled oats in this recipe for the added nutrition and texture, but quick oats also work just fine.
  • Butter: I use salted butter pretty much exclusively in all my recipes, and I recommend it here. The additional salt complements all of the sweetness. If using unsalted butter, add a pinch of salt to the brown sugar and oat mixture.
  • Vanilla Yogurt: I loved the addition of slightly sweetened vanilla bean yogurt on top of the peaches. Adds flavor and some protein! This honey whipped cream would also be a delicious addition.

Do I need to peel the peaches before baking?

This is up to your personal preference. I chose not to peel the peaches before baking, but if you prefer them peeled, the final result will still be just as delicious.

What is the best way to store leftover baked peaches?

Leftovers can be stored in the fridge in an airtight container in the fridge for up to 2-3 days. Reheat in the oven for the best texture.

These easy baked peaches are the perfect summer recipe. Ingredients

3 peaches, sliced in half and pit removed

Crumble Topping

2 tablespoon rolled oats

2 tbsp brown sugar

¼ tsp cinnamon

2 tbsp cold salted butter


Instructions

  1. Preheat oven to 350 degrees F.
  2. In a small mixing bowl, combine the oats, sugar, and cinnamon. Stir together gently, and then add in the cold butter.
  3. Using your fingers, combine the cold butter into the oat mixture until the mixture resembles coarse crumbs. Set aside while you prepare the peaches.
  4. Slice each peach in half, and then remove the pit. Place into an 8 x 8 baking dish, cut side up. 
  5. Sprinkle the brown sugar oat mixture over the top of each peach. 
  6. Bake in preheated oven for 25 minutes, or until golden brown and slightly carmelized.
  7. Serve immediately with preferred toppings. Enjoy!

Notes

  • Baking Time: Please note that the baking time will vary slightly depending on how ripe the peaches are. I try and find pretty ripe peaches, but if they are not quite as ripe, the bake time will be longer.
  • Storage: Leftovers will store well in an airtight container in the fridge for up to 3 days. Reheat in the oven until warm, and then add preferred toppings.
