If you have ever made homemade cinnamon rolls, this recipe goes through the exact same process. Except instead of using a sweet dough with brown sugar and icing, we’re adding our favorite pizza sauce, sliced pepperoni, and melty mozzarella cheese, and topping it all off with a savory garlic butter. Mmmm mmmm.

I must let you know that this recipe calls for a homemade pizza dough, which I promise you is well worth the effort. The dough does not take much time at all to rise, and can be made early in the day and kept in the fridge for dinner later. Refrigerated pizza dough will still rise beautifully! It is made with simple ingredients, and the flavor is way better than that store-bought dough.

Have I convinced you yet? Ready to make this delicious and easy recipe that’s a guaranteed crowd pleaser?

Yay! Let’s get to it.

Quick Recipe Snapshot

TOTAL TIME: A little over an hour, start to finish.
YIELD: About 15 rolls.

Ingredients You’ll Need

This is a quick overview of essential ingredients needed for this recipe. Be sure to check out the recipe card below for the full list!

  • Pizza Dough: I use my recipe for homemade pizza dough because it is so easy! You can use this recipe or use store-bought.
  • Cheese: This recipe calls for both shredded mozzarella and pecorino romano (or parmesan).
  • Pepperoni: Gotta have it! Use whatever brand you prefer.
  • Pizza Sauce: You can use store bought or homemade- whatever you like!
  • Butter + Seasonings: Melted butter with a combination of Italian seasoning, garlic salt, and cheese gets brushed over the top of the rolls while they are still warm from the oven.

Recipe Variations & Tips for Success

  1. Variations: This recipe can be easily customized to include various toppings. Swap the pepperoni slices for ground beef or sausage. In addition to the pepperoni slices, you could add cooked green pepper and onions, mushrooms, black olives…whatever strikes your fancy!
  2. Prevent Soggy Rolls: Make sure to go easy on the sauce! Adding only a light layer of sauce to the dough helps prevent overly soggy rolls.
  3. Dipping Sauces: Along with the warm marinara, these rolls could also be served with extra garlic butter or even ranch dressing for a yummy dipping sauce.

Step by Step Instructions

  1. Make the pizza dough: Use this recipe for quick homemade pizza dough, or swap with store-bought for a quicker version.
  2. Once the pizza dough has risen, turn it out onto a lightly floured surface, making sure to punch down the dough to remove any air bubbles.
  3. Using a rolling pin, roll the dough into a large rectangle shape, about 1/2 inch thick.
  4. Preheat oven to 400 degrees F.
  5. Assemble the Rolls: Add a very light layer of pizza sauce onto the dough first, making sure not to overdo it.
  6. Add shredded mozzarella cheese and sliced pepperoni, enough to your liking.
  7. Beginning at the short end of the rectangle, slowly roll your dough towards you, rolling into a log shape. Roll the dough as tightly as you can and when you get to the end, pinch the edge into the main roll to create a seam.
  8. Using a bench scraper or sharp serrated knife, begin slicing the rolls into 1 inch sections.
  9. Carefully place each roll onto a prepared baking sheet lined with parchment paper or a silpat baking mat, leaving a little space in between each roll. They will rise more in the oven.
  10. Bake in preheated oven for 12-15 minutes or until just lightly golden brown. Top with garlic butter and enjoy!

Garlic Butter Topping

  1. While the rolls are baking, make the garlic butter. Add 3 tbsp of melted butter to a small bowl. Add in 1/4 tsp garlic salt, 1/4 tsp Italian seasoning, and 1 tbsp of pecorino Romano cheese. Stir well and set aside.
  2. Once the rolls are baked, pull them from the oven. Using a pastry brush, brush the top of each roll with the savory garlic butter. Top with an extra sprinkling of cheese if desired.
  3. Serve fresh from the oven with warm marinara sauce on the side for dipping. Yum!

Storage, Freezing, & Reheating

  • Storage & Reheating: Store leftovers in an airtight container in the fridge for up to 3 days. To reheat the rolls, warm them in the oven at 350 degrees until the are warmed all the way through.
  • Freezing: Baked rolls will store well in an airtight, freezer-friendly container (I use a large Ziploc bag) for up to 3 months. Make sure to allow them to cool completely before freezing.
