Strawberries Made Even Better.

My two girls are strawberry fanatics, so when I got word that one of the local farm stands had fresh strawberries, we immediately hopped in the car to grab a couple buckets. This trip resulted in a bit of a strawberry baking spree, as I tried my best to use up the strawberries as quickly as possible.

In a last ditch effort to use up the last of our berries, I decided to make a quick strawberry sauce. When I tell you that this sauce may be one of my favorite things I have ever made, I mean it! The girls and I were eating this sauce warm, straight out of the pan. That’s how absolutely delicious it is. There was hardly any left to store (although my husband did get to try some later that day).

  • Lemon Juice: Just a splash! Adds flavor and offsets all the sweetness just slightly.
  • Vanilla Extract: I used vanilla bean paste, but pure vanilla extract works just as well. Adds so much flavor.

  1. Strawberries: Use fresh, in season berries that are ripe for the best flavor. Frozen strawberries will also work, just do not thaw before using. Thawing the berries will create excess water, which will affect the overall texture and flavor of the sauce.
  2. Texture: The amount of strawberry chunks in the sauce is up to you. I like to slightly mash the strawberries as they are cooking, creating a smoother (but still slightly chunky) consistency. If you want a really smooth sauce, an immersion blender would work well.

2. Bring the mixture to a boil over medium high heat, stirring often (I like to slightly mash the strawberries as they are cooking, but this is optional). Boil for 5 minutes, then remove from heat and stir in the vanilla. Allow to cool slightly before serving.

  • 1 tsp vanilla extract

Instructions

  1. Add chopped strawberries, sugar, and lemon juice to a small saucepan over medium high heat. Stir until the mixture is combined and the strawberries are well coated in the sugar. 
  2. Continue to stir as you bring the mixture to a boil, boiling for exactly 5 minutes. If preferred, slightly mash the strawberries as they cook to create a smoother texture.
