I have only recently discovered that to get that signature “sausage” taste, you basically take some ground meat, throw every spice you’ve got at it, and you’ll end up with a delicious and flavorful result that is akin to traditional breakfast sausage.

Although I have nothing really against sausage (I think it’s delicious), I know that it is not always the healthiest option, and is definitely not something I’m going to be making on a regular basis. I love the flavor of it though, so I needed something that could mimic the flavor, while also being healthier.

Enter ground chicken! Packed with protein and less fat, it is an easy, healthy, (and delicious!) option for homemade breakfast sausage.

  • Seasoning Salt: My secret weapon! Instead of using regular sea salt, I prefer to use seasoning salt in this recipe for added flavor and spice. I love to use Redmond Seasoning Salt.
  • Spices: I used a mix of garlic powder, onion powder, fennel seed, nutmeg, and smoked paprika. So, so good!

Step by Step Instructions

  1. In a large mixing bowl, mix together all the ingredients. Mixture is sticky (thanks to the maple syrup!), so I prefer to wet my hands slightly and then mix together until combined.

2. Once mixture is combined, preheat a large cast iron skillet over medium-low heat. Add 1-2 tablespoons olive or avocado oil for cooking.

3. Scoop out small portions of the mixture, and carefully add them to the preheated skillet. Slightly flatten into a patty using the back of a spoon or spatula. Repeat with remaining mixture until you have around 8 patties on the skillet, being careful not to overcrowd the skillet. I usually cook the patties in batches.

4. Cook for 5 minutes, then flip the sausage patties and cook for an additional 3–4 minutes, or until cooked through. The sausage patties are fully cooked when a food thermometer reads the internal temperature as 165°F.

5. Transfer to a paper towel lined plate to rest until all the patties are done. Serve immediately and enjoy!
