Description
This homemade version of maple chicken sausage is super easy, packed full of flavor, and comes together in minutes in just one bowl. Flavored with lots of herbs, spices, and a touch of maple syrup, it is the perfect breakfast staple!

- 1 lb ground chicken
- 1 tsp seasoning salt
- 1/2 tsp black pepper
- 1 tsp garlic powder
- 1 tsp onion powder
- 1/2 tsp fennel seed
- 1/4 tsp smoked paprika
- 1/4 tsp nutmeg
- 3 tbsp pure maple syrup
Instructions
- In a large mixing bowl, mix together all the ingredients. Mixture is sticky (thanks to the maple syrup!), so I prefer to wet my hands slightly and then mix together until combined.
- Once mixture is combined, preheat a large cast iron skillet over medium-low heat. Add 1-2 tablespoons olive or avocado oil for cooking.
- Scoop out small portions of the mixture, and carefully add them to the preheated skillet. Slightly flatten into a patty using the back of a spoon or spatula. Repeat with remaining mixture until you have around 8 patties on the skillet, being careful not to overcrowd the skillet. I usually cook the patties in batches.
- Cook for 5 minutes, then flip the sausage patties and cook for an additional 3–4 minutes, or until cooked through. The sausage patties are fully cooked when a food thermometer reads the internal temperature as 165°F.
- Transfer to a paper towel lined plate to rest until all the patties are done. Serve immediately and enjoy!
Notes
- Storage: Leftovers will store well in an airtight container in the fridge for up to 5 days. Reheat in the microwave or over the stovetop.
- Freezing Instructions: Freeze cooled, cooked patties in an airtight container (I like to use Ziploc bags) for up to 3 months.
