Tips for Making the Best Sourdough Cookies

  • Sourdough Discard: Be sure to use either active starter or discard that is only a few days old for the best results. Discard that has been sitting in the fridge or on the counter for more than a few days can result in a slightly sour taste in desserts.
  • Chill the Dough: I always recommend chilling cookie dough for at least an hour before baking. It makes a much thicker, chewier cookie!
  • Don’t Overbake: I always like to slightly underbake cookies; they will continue to bake slightly once pulled from the oven. Pull cookies from the oven when they are just barely starting to turn golden brown on the tops.

Sourdough Cookie FAQs

Can I use active starter in cookie recipes?

Yes! Active starter or discard works well.

Do sourdough cookies need to ferment overnight?

No! Unlike traditional sourdough bread, many sourdough cookie recipes don’t require a long fermentation period. I do recommend chilling most cookie doughs for at least an hour for best texture, but all of these sourdough cookie recipes can be made and baked the same day.
