Description

Move over pumpkin spice! The ultimate fall dessert has arrived in the form of this delicious apple crisp made with einkorn flour. Flavored with crisp apples, cinnamon and vanilla, and topped with a cinnamon and brown sugar crumble, it brings the ultimate taste of fall to any table.


Ingredients

  • 5 cups apples (thinly sliced)
  • 1/2 cup brown sugar
  • 1 tsp vanilla extract
  • 1 tbsp lemon juice
  • 1 tsp cinnamon

Crumble Topping

  • 1/2 cup all purpose einkorn flour
  • 1/2 cup rolled oats
  • 1/2 cup brown sugar
  • 1 stick cold (cubed butter)
  • 1/4 tsp salt
  • 1/2 tsp cinnamon


Instructions

  1. Begin by preheating oven to 350 degrees.
  2. Prepare the fruit filling: To a large bowl, add 5 cups of sliced or cubed apples, lemon juice, vanilla extract, and the remaining dry ingredients. Stir and set aside while you prepare the crumble topping.
  3. For the crumble crisp topping: In a separate mixing bowl, add brown sugar, einkorn flour, rolled oats, salt, and cinnamon. Stir gently and then add in 1/2 cup (1 stick) of cold, cubed butter. Using a pastry cutter or two forks, begin blending the cold butter into the flour mixture, stopping once the mixture resembles coarse crumbs.
  4. In a well seasoned 8 inch cast iron skillet , pie dish, or lightly greased 9 x 9 baking pan, pour in the apple mixture, spreading evenly throughout the baking dish. Top with the crumble topping.
  5. Bake in preheated oven for 35-40 minutes or until golden brown on top and the fruit is bubbly around the edges of the pan.
  6. Serve warm or at room temperature with a generous dollop of vanilla ice cream. Store in an airtight container to enjoy for up to 3 days.

Notes

  • You do not need to peel the apples, only if you prefer.
  • I used salted butter in this recipe, but unsalted butter will also work just fine.
  • I recommend cutting the apples as uniformly as you can, so they bake evenly.
  • If you don't want to use refined sugar, you can substitute coconut sugar if you like.
  • Use either rolled oats or old-fashioned oats in this recipe to get the best texture. I do not recommend quick oats.
  • You can easily customize this fruit crisp recipe! Experiment with different flavors by substituting a variety of fresh fruit. Change it to whatever is in season, like this einkorn blueberry crisp or peach blueberry crisp.
  • Our favorite way to enjoy this apple crumble is straight from the oven and topped with a big scoop of homemade ice cream.
