Description
This no bake protein balls recipe has quickly become one of our household favorite snacks. Packed full of protein, with wholesome ingredients like maple syrup, natural peanut butter and sprouted oats, it’s a delicious and healthy snack I can feel good about. My kids love it with a couple tablespoons of rainbow sprinkles for some added color and fun.
Ingredients
- 3/4 cup creamy peanut butter
- 1/4 cup maple syrup
- 3 tbsp water
- 1/2 cup vanilla protein powder (I use Ancient Nutrition)
- 1/2 cup mini chocolate chips
- 3 cups sprouted rolled oats
- 1/8 tsp salt
- 2-3 tbsp rainbow sprinkles (I used Watkins dye free)
Instructions
- In a large mixing bowl, whisk together the peanut butter, water, maple syrup, and salt.
- Add in the protein powder and oats, stirring well until combined.
- Add in the mini chocolate chips and sprinkles, stirring again.
- Using a tablespoon, scoop out rounded balls of the mixture, using your hands to gently roll into a ball. Place each ball on a baking sheet lined with parchment paper. Allow to chill in the fridge for 30 minutes to firm up before placing in an airtight container. Enjoy!
Notes
Top Tip: Wet your hands with water before beginning to roll out the balls. The mixture is very sticky (thanks to the maple syrup!) and this will help immensely when forming the balls.
Oats: I used Sprouted Rolled Oats from First Degree Organics. Regular old fashioned oats or quick oats will work as a substitute. If using quick oats, you may need to add an additional 1/4 cup.
Storage: These protein balls will store well in an airtight container in the fridge for up to 1 week.
